Vanilla Bean & Blackberry Chia Pudding for Gut Health

Start the day with intention. This vanilla bean and blackberry chia pudding is a masterclass in morning nourishment, combining high-fibre chia seeds with protein-rich Greek yoghurt to support a thriving microbiome and steady energy.

Ingredients

  • 3 tbsp chia seeds
  • 120ml unsweetened almond milk
  • 1 tbsp high-quality vanilla protein powder
  • 1/2 tsp vanilla bean paste
  • 1 tbsp maple syrup
  • 50g full-fat Greek yoghurt
  • Handful of fresh blackberries

Method

  1. In a glass jar, whisk together the chia seeds, almond milk, protein powder, vanilla bean paste, and maple syrup until perfectly smooth.
  2. Allow the mixture to rest for five minutes, then stir again to prevent any lumps from forming.
  3. Cover and refrigerate for at least two hours, or ideally overnight, until the mixture achieves a thick, pudding-like consistency.
  4. To serve, layer the set chia pudding with a generous spoonful of Greek yoghurt and top with fresh blackberries.
